Melt some butter, stir in brown sugar, crack in an egg, toss in nuts and vanilla, then fold in the dry ingredients.

That’s it. One bowl, no mixer, no fuss.

Thirty minutes later you’ve got a pan of chewy, golden butterscotch squares with crispy edges and a soft, caramel-scented center.

Kitchen Tips

  • Let the melted butter cool for a minute before adding the egg so it doesn’t scramble
  • Use a shallow pan as the recipe calls for; a deep pan will give you underbaked centers
  • Pull them when the edges look set but the center still has a slight wobble; they firm up as they cool

Directions

Melt butter then add brown sugar, unbeaten egg, nuts and vanilla.

Mix and sift dry ingredients and add to first mixture.

Bake in a shallow buttered pan in a moderate oven, 350℉ (180℃). for 30 minutes.

Cool on a wire rack.
