Banana Marshmallow Squares

Gooey banana marshmallow bars with a cake mix crust, melted marshmallow-banana filling, and a crumbly nut-studded topping. Semi-homemade and baked in a 9×13 pan in under 45 minutes.

Yellow cake mix gets pressed into a buttery, nutty crust on the bottom. The filling? Marshmallows melted smooth in a double boiler, mixed with vanilla pudding mix and mashed bananas, then spread across the base. More crumbly cake mix dough gets scattered over the top.
They bake up with a golden crumble crust and a stretchy, sweet marshmallow-banana center that’s somewhere between a cookie bar and a candy bar.
Kitchen Tips
- Stir the marshmallows constantly as they melt. They go from smooth to scorched fast in a double boiler
- Press the bottom crust firmly and evenly so it holds together when you cut the bars
- Let them cool completely before slicing. The marshmallow filling needs to set or you’ll have a sticky mess
- Use ripe bananas for the sweetest filling. They blend into the melted marshmallow more smoothly too

Directions
CRUST: Preheat oven to 350℉ (180℃).
Grease 9×13 inch pan.
In large bowl combine cake mix, butter, eggs and nuts.
Blend well.
Press ½ into bottom of pan; reserve remaining for topping.
FILLING:
In double boiler, melt marshmallows, stirring constantly, until smooth.
Add dry pudding mix and bananas to melted marshmallows.
Spread evenly over dough.
Crumble remaining dough over filling.
Bake 20 to 25 minutes or until dough is golden brown.
