Coconut pani squares, a Sri Lankan sweet of crisp fried dough cubes tossed in coconut treacle syrup, pressed into a block and cut into chewy-crunchy squares. Sticky, golden, and lightly caramel.

1 hrsThese coconut pani squares are a Sri Lankan treat built on two textures: little nuggets of crisp fried dough bound together in sticky coconut treacle, known as pani.
It starts with a simple egg dough that’s kneaded smooth and rested, then rolled thin and cut into tiny half-inch cubes. Frying them turns the cubes golden, puffed, and crunchy, like miniature dough croutons.
The pani is both the glue and the flavor. Coconut treacle and sugar are boiled to the right temperature, forming a syrup that coats every cube and sets as it cools, binding them into a block with a deep, mellow caramel sweetness.
Working fast matters: toss the fried cubes in the hot syrup, press the mixture firmly into a greased sheet while it’s still warm and pliable, then let it cool and cut into squares. Press well, or the squares crumble apart.
Kitchen Tips
- Cut the dough into small, even cubes so they fry uniformly and bind neatly.
- Fry until deep golden and crisp; pale cubes go soft once coated in syrup.
- Boil the pani syrup to the right stage, using a thermometer, so it sets firm rather than staying loose and sticky.
- Press the warm mixture firmly and compactly so the squares hold together when cut.
Variations
- Use jaggery or kithul treacle for the most traditional flavor.
- Add a pinch of cardamom or cinnamon to the syrup.
- Toss in toasted sesame seeds or chopped nuts for extra crunch.

Sift the flour, add baking powder, salt and egg.
Mix well and kneed dough until smooth, about 10 minutes, leave aside for 20 to 25 minutes.
In wax paper roll out dough to from a large rectangle12×12 inch, thick ⅛ inch.
Cut in to even ¼ inch stripes. afterthat cut 1/2x½ inch cubes (squares).
Heat oil and fry cubes until golden brown.
In a thick bottomed pan put coconut pani, sugar and bring to boil up to 100 cup degrees, using thermometer.
Then add the pani mixture to the cubes and mix well.
Pour the mixture greased cookie sheet. press firmly mixture until compact, about one inch in height.
Allow to cool about one hour.
Cut in to squares.
Serve and enjoy.
