Browned SPAM gets combined with sautéed carrots, onion, celery, and garlic, then simmered with green beans, whole tomatoes, and vegetable juice in a light thyme-and-pepper-seasoned sauce.
Thinly sliced russet potatoes get layered on top like a lid, sprayed with cooking spray, and broiled until they turn golden and slightly crispy.
It’s old-school comfort cooking that fills the kitchen with the kind of aroma that makes everyone wander in asking “what’s for dinner?"
Chef Tips
- Slice the potatoes paper thin (⅛ inch) so they crisp up properly under the broiler.
- Par-boil the potato slices first so they’re tender on the inside and crunchy on top.
- Watch the broiler closely in the last few minutes. The potatoes go from golden to charred fast.
