This macaroni and TVP skillet mix is a smart pantry-prep move, a shelf-stable jar of dry elbow macaroni, textured vegetable protein, dried onion, and Italian herbs ready to dump into a pot of crushed tomatoes whenever a busy night hits. Think of it as homemade Hamburger Helper without the meat, the additives, or the box.

The TVP is what makes this work. The dry granules rehydrate in the simmering tomato liquid and absorb every drop of flavor, taking on a meat-like texture that mimics ground beef in a one-pot pasta dish for a fraction of the cost.

Dried minced onion is the secret weapon. It plumps up in the cooking liquid into something far more flavorful than fresh, and it contributes a depth that fresh onion can’t match without sauteing first.

Kitchen Tips

  • Store the dry mix in a tightly sealed jar in the pantry for up to 6 months, the herbs lose punch after that.
  • Crush the canned tomatoes with your hands or a potato masher for better texture than pre-diced canned tomatoes.
  • Stir occasionally during the simmer, the macaroni and TVP both want to stick to the bottom of the pan.
  • Add more water a half cup at a time if the mixture looks too thick before the macaroni is tender, the TVP keeps drinking up liquid.

Variations

  • Add the suggested cup of frozen peas during the last 5 minutes for a colorful, slightly sweet contrast.
  • Stir in a tablespoon of nutritional yeast at the end for a cheesy, umami-rich finish.
  • Top each bowl with grated parmesan and red pepper flakes for an arrabbiata-leaning version.

this looks amazing..I just started a lacto ova vegetarian diet during weekdays. I am making this Monday and might use it as a gift in canning jars!

I tried this and liked it. Then added a package of Taco Seasoning - and loved it - a little bit of zing.
