pimento stuffed green olives

Key Points

  • Brined green olives stuffed with a sliver of sweet red pimento pepper.
  • The classic martini garnish; their brine makes a martini dirty.
  • Chopped, they salt and brighten paella, picadillo, tapenade, and antipasto trays.
  • They are salty, so cut back on added salt and taste at the end.
  • Keep submerged in brine and refrigerated after opening; firm types last best.

What are pimento stuffed green olives?

Pimento stuffed green olives are unripe olives cured in brine and packed with a sliver of red pimento pepper where the pit used to be. The olive brings a firm, salty, briny bite, and the pimento adds a mild sweetness and a flash of red.

They are the classic cocktail olive and a pantry workhorse for salads and relishes and a backbone of Spanish and Latin cooking.

The stuffing is usually pimento paste piped into a pitted olive. You will also find them stuffed with garlic or almonds the same way, and spicier ones packed with jalapeño.

Ways to Use Them

The famous job is the martini, where one or three olives season the glass and a splash of their brine makes it dirty. On an antipasto or relish tray, as in Antipasto #1, they sit alongside cured meats and cheese.

Chopped, they bring salt and tang to cooked dishes. Picadillo Con Alcaparras leans on green olives and capers to balance its sweet-savory ground beef, and Aunt Julia's Paella scatters them through the rice. Olive Tapenade with Feta blitzes them into a briny spread for crostini and sandwiches.

They also lift simple salads and pastas, as in Whole Wheat Pasta with Cilantro, Sun-Dried Tomatoes and Feta.

Cooking and Pairing

Green olives play well with tomatoes, garlic, capers, and citrus, and they are a defining note in Spanish, Sicilian, and Puerto Rican dishes. Their saltiness anchors rich braises and sharpens oily fish.

The mistake is forgetting how much salt they carry. When a recipe calls for chopped olives, hold back on added salt until you taste at the end, or the dish turns harsh.

If the brine flavor is too aggressive, give the olives a quick rinse under cold water before chopping. It washes off the surface salt without stealing the olive flavor. For tapenade and relish, a brief soak mellows them further so the spread does not overpower the bread.

Substitutes

Manzanilla or Castelvetrano olives, pitted and chopped, swap in cleanly and you lose only the pimento's sweetness. To get that note back, stir in a little chopped jarred pimento or roasted red pepper.

Capers cover the salty-briny role in a sauce or relish, though they are smaller and sharper, so use less. Kalamata or other purple olives work for flavor but darken the dish and read as fruitier and less crisp.

In a martini, a cocktail onion turns it into a Gibson. Different drink, same salty garnish idea.

Buying and Storage

Stuffed green olives come whole or pre-sliced for salads, in glass jars or cans. Whole olives in a glass jar keep their texture best; sliced salad olives are convenient but go soft faster. Buy them in brine rather than dry-packed if you want the firmest bite.

An unopened jar is shelf-stable for a year or more. Once opened, keep the olives submerged in their brine and refrigerated, where they hold for a couple of months.

If the brine evaporates below the olives, top the jar with a little water and salt so the exposed ones do not dry out or mold.

Eat heartily, accompanied by much loud Italian conversation. In fact, I typed this accompanied by much loud Italian conversation. My parents were here, and both were shouting instructions over my shoulder. They disagreed about the arrangement of the lettuce - my mother said that the hole in the middle of the platter was necessary; my father insisted that it wasn't, saying you can just dump the tuna on top of the lettuce. I finally had to give up on this reply until they went home. So now, in the peace and quiet of the aftermath, I've finished it. Hope you had a wonderful holiday.
