45 minThese bars are the kind of thing grandma used to wrap in wax paper and tuck into your lunchbox without a word.
The dough has a crumbly, oat-bar quality to it, thanks to whole bran flakes cereal mixed into a base of brown sugar, corn syrup, and shortening. Half gets pressed into the pan, spread with strawberry jam, then topped with the other half, flattened between sheets of wax paper.
They bake up golden and chewy with a sticky-sweet fruit layer running through the middle.
Cut them into squares while still slightly warm for the cleanest edges.
Kitchen Tips
- Use a good-quality strawberry jam with visible fruit pieces for the best flavor and texture
- Flatten the top layer of dough between wax paper first, then peel it off and lay it over the jam in one piece
- Swap in raspberry, apricot, or any favorite jam to mix things up
