Sri Lankan hathu mushroom curry, a quick stir-fry of mushrooms, green pepper, and onion with curry powder, turmeric, and chili. Vegetarian, ready in 20 minutes.

Hathu is the Sinhala word for mushroom, and this Sri Lankan mushroom curry is the kind of fast vegetarian side that lands on tables across the island. Sliced mushrooms, green bell pepper, and onion get tossed with curry powder, turmeric, chili powder, and salt, then quickly stir-fried in oil until the mushrooms release their juices and absorb the spice.

Unlike heavier coconut milk curries, this one stays mostly dry. The mushroom liquid does the work, with an optional splash of thick coconut milk at the end if you want a richer finish.

Chef Tips

  • Slice the mushrooms thick. Thin slices vanish during the stir-fry; thick slices keep their bite and meaty texture.
  • Pre-mixing the spices with the raw vegetables coats every piece evenly. Adding spices to the hot pan instead can scorch them.
  • Use a Sri Lankan-style roasted curry powder if you can find one. The roast brings deeper, smokier notes than standard Indian curry blends.
  • Don’t crowd the pan. Mushrooms steam instead of fry when piled too deep, and you lose the seared edges that hold the flavor.
  • Add the optional coconut milk only at the very end, off the heat. Boiling it splits the cream and ruins the silky texture.

Variations

  • Add a few curry leaves and a small piece of cinnamon stick for true Sri Lankan flavor.
  • Stir in a handful of fresh spinach in the last minute for extra greens.
  • Serve over rice with a side of pol sambol (coconut sambal) for a complete Sri Lankan plate.

Directions

Slice the mushrooms, pepper and onion.

Place in a bowl, add the salt, curry powder, turmeric and chili powder and mix well.

Heat the oil and stir fry the mushroom mixture for 10 minutes.

Note - If this curry appears too dry add 60 ml Coconut milk, thick, just prior to serving.
