This layered dip starts with a base of taco-seasoned refried beans spread across a pizza pan, then gets loaded up with green onions, cubed SPAM, chili beans, and a double hit of melted cheddar and Monterey Jack.
Bake it until everything is hot and bubbly, then blanket the top with cool sour cream and scatter on some olives.
Grab the tortilla chips and some salsa, and stand back.
Chef Tips
- Spread the refried bean layer thin and even so every chip scoop gets a proper foundation.
- Let the dip cool for 5 minutes after baking. Molten cheese and eager fingers are not friends.
- Swap in pepper jack for Monterey Jack if you want to sneak in some extra heat without adding another ingredient.

Directions
Heat oven to 350℉ (180℃).
Combine refried beans and taco seasoning.
Spread mixture in bottom of 12 inch pizza pan.
Layer green onions, SPAM, chili, and cheeses in pan.
Bake 20 to 25 minutes or until hot and cheese is melted.
Spread sour cream over the top. Sprinkle with olives.
Serve with salsa and tortilla chips.
