Black bean & Corn Salsa
Submitted by simplysan67
Black bean and corn salsa is a fresh, no-cook dip of black beans, sweet corn, and crisp vegetables tossed in a tangy vinegar dressing. Chilling lets the flavors meld. Scoop with chips or spoon over tacos, grilled chicken, and fish.

2 minFresh, chunky, and endlessly useful, this black beans and corn salsa comes together in one bowl with no cooking at all. It walks the line between a salsa, a dip, and a side, and disappears just as fast in any role.
The method couldn’t be simpler: toss everything together, then drizzle the vinegar over at the end. Adding the acid last, rather than mixing it in from the start, keeps the vegetables crisp and bright instead of pickling them too soon. Black beans bring creamy heft, corn brings sweetness, and the vinegar ties it together with tang.
The one step worth your patience is the chill. Letting it rest in a sealed container for a few hours gives the flavors time to meld and deepen, so the whole thing tastes more cohesive than a bowl of freshly chopped parts. Stir before serving to redistribute the dressing.
Kitchen Tips
- Add the vinegar at the end so the vegetables stay crisp rather than going soft.
- Chill it at least a few hours, or overnight, so the flavors meld and deepen.
- Drain and rinse canned beans and corn well so the salsa isn’t watery.
Variations
- Scoop with tortilla chips, or spoon over tacos, grilled chicken, fish, or rice bowls.
- Add diced avocado, jalapeno, red onion, or fresh cilantro and lime.
- Stir in diced mango or tomato for a sweeter, fresher salsa.
