Broccoli florets line the bottom of the dish, get a generous shower of grated cheddar, then a creamy curry-spiked crab sauce gets poured over the top. The curry powder is the key here. It is subtle, only a quarter teaspoon for the whole dish, but it transforms the casserole from generic creamy crab into something that tastes far more complex than the ingredient list suggests. A squeeze of lemon juice at the end of the sauce-building keeps the whole thing from feeling heavy. Drain crab and set aside.
Cook broccoli until almost tender and arrange in the bottom of greased 1-quart casserole. Sprinkle with grated cheese.
Melt ¼ cup of butter and sauté the onion. Add flour, curry powder and salt.
Gradually stir in milk. Cook until thickened. Stir in lemon juice. Add crab.
Pour over broccoli and cheese in casserole. Mix 2T of melted butter with bread crumbs and sprinkle over top.
Bake at 350℉ (180℃). for 30 mins.
