This is the kind of stick-to-your-ribs dinner that costs next to nothing and feeds the whole family without complaint.

Ground beef, pearl barley, canned tomatoes, and tomato paste simmer together in one pot until the barley turns plump and tender and the whole thing thickens into a hearty stew. Green pepper and garlic add a savory backbone, and a touch of sugar balances the acidity of the tomatoes.

One pot. About an hour. Leftovers that taste even better the next day.

Kitchen Tips

  • Use medium pearl barley for the best texture; quick barley works too but cuts the simmer time to about 15-20 minutes
  • Stir occasionally to keep the barley from sticking to the bottom as the liquid absorbs
  • This freezes well in individual portions for easy grab-and-go lunches

Directions

In a 4-quart saucepan or Dutch oven, brown ground beef.

Add green pepper, onion and garlic. Cook until onion is tender; drain.

Add remaining ingredients. Bring to a boil. Reduce heat to low; cover.

Simmer 45 to 50 minutes or until barley is tender, stirring occasionally.

Five 1-cup servings *NOTE: To use Quick Barley, substitute 1 cup quick barley for medium barley. Prepare recipe as directed above except simmer 15 to 20 minutes or until barley is tender, stirring occasionally.
