This is the definition of set-it-and-forget-it comfort: beef tips swim in savory gravy made from onion soup mix, cream of mushroom soup, and beef broth for 6 to 8 hours until fork-tender.
No browning, no fuss, just dump everything in the crockpot and walk away.
Serve over a mountain of creamy mashed potatoes or buttered egg noodles to soak up every drop of that rich, oniony gravy.
Crockpot Tips
- Stew meat works too: Beef tips and cubed stew meat are interchangeable; use whatever’s on sale
- Low and slow essential: Cook on low for tender, melt-in-your-mouth results; high heat makes meat tough
- Stir before serving: Gravy thickens and settles; give it a good stir to redistribute before plating
- Freezes beautifully: Cool completely, freeze in portions, and reheat for easy weeknight dinners
Variations
- Add 8 oz sliced mushrooms for extra mushroom flavor and texture
- Stir in ½ cup sour cream at the end for creamier, richer gravy
- Use golden mushroom soup instead of cream of mushroom for deeper color
