1 hrsThink of this as a Denver omelet that married a souffle and moved into a biscuit crust. Refrigerated buttermilk biscuits get pressed into a round cake pan to form the base, then a fluffy filling of cubed Spam, cheddar, cream cheese, green pepper, and onion puffs up around it as whipped egg whites do their thing.
The souffle effect comes from folding stiffly beaten egg whites into the Spam and cream cheese mixture. The air trapped in those whites lifts the filling as it bakes, creating a light, puffy layer on top of the dense biscuit crust. It’s a contrast that works surprisingly well.
Pressing the biscuit dough firmly over the bottom of the pan creates a continuous crust with no gaps. Loose spots let the filling seep through and burn on the bottom.
Kitchen Tips
- Soften the cream cheese fully before beating with the egg yolks. Cold cream cheese leaves lumps that won’t incorporate the egg whites smoothly.
- Beat the egg whites until stiff peaks form, then fold gently. Stirring or whisking them in defeats the purpose and gives you a flat, dense filling.
- Don’t open the oven during the first 30 minutes. Cold air deflates the souffle before it sets.
- Test with a knife near the center. It should come out clean when the custard has fully set.
Variations
- Use diced ham in place of Spam for a more traditional Denver-style flavor.
- Add diced jalapeños for a spicy kick.
- Swap cheddar for pepper jack cheese to bring both heat and creaminess.

Directions
Heat oven to 350℉ (180℃).
Separate dough into 10 biscuits. Place in ungreased 9 inch round cake pan, press over bottom of pan to form crust.
In small bowl, beat egg yolks and cream cheese until smooth, stir in SPAM, cheese, green pepper, and onion.
Beat egg whites until stiff, fold into SPAM mixture.
Spoon evenly over crust. Sprinkle with paprika.
Bake 45 to 50 minutes or until knife inserted near center comes out clean.
Cut into wedges to serve.
