1 hrsThis meatloaf stretches a dollar without sacrificing flavor by splitting the meat three ways: ground chicken, pork, and beef in equal parts.
Each protein brings something different to the party. The chicken keeps things light, the pork adds richness, and the beef gives you that classic meatloaf backbone. Honey mixed into the meat adds a subtle sweetness that caramelizes beautifully during the long, slow bake.
But the real star is the glaze. Hot mustard, crushed garlic, and apricot preserves get smeared over the top before baking, creating a sticky, sweet-sharp crust that’ll have you cutting “just one more thin slice” until the loaf is gone.
Kitchen Tips
- Don’t overmix the meat. Stir just until combined or you’ll end up with a dense, tough loaf instead of a tender one.
- The honey helps the loaf stay moist during the long bake, so don’t skip it even if it seems unusual.
- Let the meatloaf rest 10 minutes after pulling it from the oven. It firms up and slices much cleaner.
