Snow peas and sliced water chestnuts get a quick toss in a hot wok with walnut oil and a dash of sesame oil. Four minutes of stir-frying total. That’s the whole recipe.
The walnut oil brings a subtle nuttiness that regular vegetable oil can’t match, and the sesame oil adds that unmistakable toasty fragrance right at the end.
Serve alongside grilled chicken, salmon, or as part of a bigger stir-fry spread.
Kitchen Tips
- Dry the water chestnuts thoroughly on paper towels before they hit the hot oil. Wet water chestnuts will spatter and steam instead of searing.
- Keep the heat high and move everything constantly. Stir-frying is about speed, not patience.
- A dash of sesame oil goes a long way. It’s potent stuff. Too much overwhelms the delicate snow peas.
