Natchitoches is a town in Louisiana with a long Creole heritage and a deep love of dressed-up canned beans. This is that kind of recipe: a can of pork and beans elevated to a side dish worthy of a barbecue or potluck by sauteed onion and green pepper, chopped ham, honey, brown sugar, and Worcestershire, with a generous splash of hot sauce.

The trick that makes this work is the unusual saute method. Onion and green bell pepper cook in ketchup rather than oil. The sugar in the ketchup caramelises around the vegetables and concentrates into a sweet base before anything else goes in.

Fold the beans in carefully and stir as little as possible during cooking. The directions emphasise this for good reason: canned beans break easily under aggressive stirring, and broken beans turn the dish into mush. Gentle folding with a wide spoon preserves the texture.

Kitchen Tips

  • Use a good-quality canned ham, smoked ham steak, or even leftover holiday ham. Cheap ham gives flat flavour; a properly cured ham makes a difference.
  • Cook on truly low heat. High heat will scorch the sugar and brown the bottom of the pan beyond repair.
  • Let the dish stand after cooking. Resting allows the flavours to meld and the sauce to thicken further as it cools.
  • Reheat in the microwave for the easiest second-day serving, or warm gently in a covered casserole.

  • Add a teaspoon of yellow mustard or Creole mustard for more tang and a Louisiana twist.
  • Stir in crumbled cooked bacon for a smokier, richer pot of beans.
  • Top with a sprinkle of chopped green onion just before serving for fresh colour and bite.

Directions

In a large skillet, sauté onion and green pepper in ketchup.

Blend in honey, brown sugar, Worchestershire, hot sauce, and ham.

Add beans, being careful not to stir too much.

Cook on low heat, stirring occasionally and CAREFULLY, until liquid is absorbed.

Let stand. Microwave to heat.
