1 hrsThis retro noodle casserole is the kind of recipe that gets scribbled on index cards and passed around church potlucks. Layers of twisty noodles, seasoned ground beef in tomato sauce, and a creamy cheese filling that goes rich and bubbly in the oven.
The cheese layer is what makes this one worth bookmarking. Cream cheese, sour cream, and cottage cheese blended with green onions create a tangy, almost cheesecake-like filling that cuts right through the richness of the beef. It’s a three-cheese approach that gives you both creaminess and a slight tang in every bite.
The layering matters. Noodles on the bottom, cheese mixture in the middle, meat on top. Repeat. That structure keeps the noodles from drying out and lets the cheese filling melt down through the layers as it bakes. Uncover it for the last 15 minutes to get a slightly crispy, golden top.
Pro Tips
- Soften the cream cheese before mixing. Cold cream cheese leaves lumps in the filling that won’t smooth out during baking.
- Rotini or fusilli are your “twisty noodles” here. Their spirals trap the cheese filling and meat sauce in every curl.
- Drain the ground beef well after browning. Excess grease will make the bottom layer of noodles soggy instead of tender.
- This freezes beautifully. Assemble, cover tightly with foil, and freeze unbaked for up to 3 months.
Variations
- Mexican-style: Stir taco seasoning into the beef and swap cottage cheese for pepper jack. Top with crushed tortilla chips before the final bake.
- Mushroom version: Sauté sliced mushrooms with the beef for an earthy depth that pairs well with the creamy filling.
