50 minThese old-school mincemeat bars layer a spiced fruit filling between a chewy, molasses-dark oat crust. The base comes together fast: shortening beaten with sugar and molasses, then mixed with flour and rolled oats for a dough that’s more crumble than cookie.
Half gets pressed into the pan, the simmered mincemeat goes on top, and the rest gets dropped in spoonfuls over the filling. That scattered top layer bakes into a rustic, craggy crust with golden edges and soft spots where the fruit peeks through.
Let them cool completely in the pan before cutting. Warm mincemeat filling will ooze everywhere if you rush it. A dusting of powdered sugar before serving makes them look like they took twice the effort.

Directions
For filling, in a saucepan bring water to boiling.
Add mincemeat; reduce heat.
Cover and simmer for 3 minutes, stirring often.
Cool.
In a large bowl beat shortening with an electric mixer on medium speed for 30 seconds.
Gradually add granulated sugar, beating until fluffy.
Beat in molasses.
Add flour; beat until combined.
Use a wooden spoon to stir in oats.
Press one/half of the oatmeal mixture onto the bottom of a greased 9×9×2-inch baking pan.
Spread mincemeat filling onto oatmeal mixture.
Drop remaining mixture by teaspoonsfuls onto filling.
Bake in a 350℉ (180℃) oven F for 35 minutes or until light brown.
Cool in the pan on a wire rack.
If desired, sprinkle with powdered sugar.
Cut into diamonds or bars.
