30 minThis is full-on retro 1970s microwave cookery, the kind of recipe that gets passed around between busy parents and dorm-dwelling college students for one good reason: it works. Twenty minutes start to finish, one casserole dish to wash, and a saucy, spoonable ground beef mixture that piles onto a hamburger bun like classic sloppy joes.
The twist that sets this version apart is the chopped hot dogs stirred in at the end. It sounds odd until you taste it. The frankfurters add a smoky, salty bite that breaks up the texture and turns every other forkful into a little surprise. It’s also a smart way to stretch the beef when feeding a crowd.
Microwaving raw ground beef sounds wrong, but it browns just fine if you break it up frequently with a fork. The trick is to drain the fat thoroughly before the sauce goes in, otherwise the joes turn greasy. Cooking uncovered helps the moisture escape so the meat ends up crumbly rather than stewed.
Chili powder does the heavy work on flavor. Six teaspoons sounds like a lot, but tomato sauce drinks up spice fast, and this recipe leans on it for warmth and depth.
Kitchen Tips
- Use a deep casserole dish, not a shallow plate. Tomato sauce splatters in the microwave when the meat hits high heat.
- Stir the beef every couple of minutes while it cooks to break up the clumps and brown evenly.
- Toast the buns conventionally while the meat cooks for the right contrast of soft filling and crisp bun.
- Leftovers reheat well in the microwave with a splash of water to loosen the sauce.
Variations
- Add a chopped onion and bell pepper with the beef for a more classic sloppy joe profile.
- Swap hot dogs for cooked smoked sausage rounds, or skip them entirely for a leaner version.
- Stir in a tablespoon of brown sugar and a squirt of mustard for a sweet-tangy spin.
