2 hrsThis no-bake fudge skips the candy thermometer and the tricky temperature stages that make traditional fudge intimidating. Peanut butter, softened butter, corn syrup, vanilla, and powdered sugar get beaten together into a smooth, sweet base. Then melted chocolate chips mixed with more peanut butter get gently swirled through for that signature marble pattern.
The swirl technique is what makes this look impressive. You don’t want to fully mix the chocolate into the peanut butter base. One or two gentle folds with a knife or spoon creates dramatic dark ribbons through the golden fudge. Overmix and you lose the marble effect entirely.
Corn syrup keeps the texture smooth and slightly chewy rather than crumbly or grainy. It prevents the powdered sugar from crystallizing as the fudge sets in the fridge, giving you clean cuts and a creamy mouthfeel.
This needs to stay refrigerated. The butter and peanut butter soften quickly at room temperature, and the fudge will lose its shape within an hour on a warm counter.
Kitchen Tips
- Melt the chocolate chips gently in short microwave bursts, stirring between each, to prevent scorching. Burnt chocolate is bitter and grainy.
- Stir the powdered sugar in gradually. Dumping it in all at once creates clouds of sugar dust and makes mixing harder.
- Pour into a small pie plate or an 8×8 pan lined with parchment for easy removal.
- Let it set for at least 2 hours before cutting. Soft fudge squishes instead of slicing.
Variations
- Use almond butter or cashew butter instead of peanut butter for a different nut flavor.
- Add a tablespoon of cocoa powder to the chocolate mixture for a darker, more intense chocolate swirl.
- Press crushed peanuts into the top before chilling for added crunch.
