This is a proper British-style fruit relish, the kind that pairs with roast pork, cold cuts, or a sharp wedge of cheddar on a cheese board. Gooseberries bring a natural tartness that vinegar alone can’t match, and the long simmer with raisins, brown sugar, and onion transforms everything into a thick, chutney-like condiment.

The spice blend is what sets this apart from a generic fruit preserve. Cayenne adds a low, warm heat. Ginger gives it bite. Turmeric brings earthy warmth and a golden color. Prepared mustard rounds out the flavors with a tangy sharpness. Together they give the relish a complexity that develops more as it sits.

Everything gets chopped, combined in a pot, and simmered for 45 minutes, stirring frequently to prevent scorching. Directions

Chop gooseberries, raisins, and onion.

Add other ingredients.

Heat slowly to boiling.

Simmer ¾ hour. Stir frequently. Rub through coarse sieve.
