Marrying strawberries with gooseberries is one of those quietly genius pairings from old British and American preserving traditions. The strawberries bring sweetness and color; the gooseberries bring tartness and (critically) natural pectin. Together they make a jam that sets without commercial pectin and tastes more complex than either fruit alone.

Gooseberries are unusually high in pectin compared to most fruits, which is why this three-ingredient recipe holds together. Strawberries are pectin-poor and would normally need added pectin or a long boil to gel; the gooseberries do that work invisibly.

The technique is old-fashioned and unhurried: heat slowly to a boil, then simmer with frequent stirring until the jam thickens. ‘Slowly’ is key. Rushing the boil scorches the sugar on the bottom of the pot and gives the finished jam a burnt edge.

This recipe makes a large batch, around 80 servings worth (about 5 to 6 half-pint jars), making it ideal for canning a summer’s worth at once when both fruits are in season.

Pro Tips

  • Stem the gooseberries by snipping both ends with kitchen shears. The stems and dried blossom tips stay tough in the jam.
  • Use a wide, shallow heavy-bottomed pot. Wide surface area speeds evaporation and keeps the bottom from scorching.
  • Test the set on a chilled plate. A small spoonful should wrinkle when pushed with your finger. Runny jam needs more time.
  • Sterilize jars and lids in boiling water before filling, then process filled jars in a water bath for 10 minutes for shelf-stable storage.

Variations

  • Add the zest and juice of one lemon for extra brightness.
  • Substitute red currants for half the gooseberries for a deeper red color.
  • Stir in a vanilla bean or a few sprigs of fresh thyme during the simmer for an aromatic version.
