35 minWhen you want something light yet satisfying, fish poached in tomato-wine sauce hits the spot.
Flounder fillets simmer gently in a fragrant sauce of tomatoes, garlic, fresh basil, and a splash of dry white wine.
The Mediterranean flavors are bright and clean, letting the delicate fish shine.
Variations
- Swap flounder for tilapia, cod, or any mild white fish
- Add olives and capers for a puttanesca spin
- Serve over angel hair pasta or with crusty bread for sauce-soaking
Kitchen Tips
- Simmer the sauce first to let flavors meld before adding fish
- Don’t stir the fish once added; it will break apart
