La Madeleine’s tomato basil soup is the cult-favorite copycat from the French-American bakery chain. The recipe is almost defiantly simple: ripe tomatoes simmered with juice or stock for 30 minutes, pureed with a generous handful of fresh basil, then finished off the heat with cream and butter swirled in for that signature velvety, almost lipstick-pink texture.

No flour, no roux, no cornstarch. The body comes from the cooked-down tomatoes and the richness comes from the cream-and-butter finish that turns it into bistro-style luxury.

Pro Tips

  • Use the ripest tomatoes you can find. Out-of-season hothouse tomatoes give thin, acidic soup; peak summer tomatoes are sweet enough to balance the cream naturally.
  • Add the basil to the blender at the end, not during the simmer. Cooked basil goes muddy and loses the bright, peppery flavor that defines this soup.
  • Pure in batches and leave the lid cracked or use a kitchen towel. Hot soup in a sealed blender builds steam and erupts.
  • Finish over very low heat. Boiling cream after it’s added can split the soup; gentle warming keeps it smooth.
  • A pinch of sugar can balance overly acidic tomatoes if needed. Taste before salting and adjust both at once.

Variations

  • Use San Marzano canned tomatoes (28 oz) when fresh tomatoes aren’t in season.
  • Stir in 1 tablespoon tomato paste during the simmer for deeper, more concentrated tomato flavor.

Directions

Combine tomatoes, juice and/or stock in saucepan.

Simmer 30 minutes.

Puree, along with the basil leaves, in small batches, in blender or food processor.

Return to saucepan and add cream and butter, while stirring, over low heat.

Garnish with basil leaves and serve with your favorite bread.
