Easy lasagna made with a Bisquick batter instead of noodles, layered with ground beef, spaghetti sauce, zucchini, cottage cheese, and melted mozzarella. Feeds 15 in under an hour.

50 minThis lasagna skips the noodles entirely and uses a biscuit baking mix batter as the base instead. It sounds unconventional, but it works: the batter bakes up into a soft, bready layer that holds up under all that meaty sauce and melted cheese.
Ground beef and onions get cooked with spaghetti sauce, oregano, and parsley. The batter is a quick mix of Bisquick, cottage cheese, Parmesan, and milk, spread into the pan and layered with shredded zucchini and mozzarella.
It feeds a crowd of 15, which makes it ideal for potlucks, game day, or any time you need to feed a lot of people without a lot of fuss.
Kitchen Tips
- Don’t worry about perfectly even batter layers. You’re dropping the second layer by teaspoonfuls, and it all spreads and merges in the oven. Imperfection is fine.
- Squeeze the shredded zucchini dry. Just like with regular lasagna, excess moisture from the zucchini will make the bottom soggy.
- Let it rest 10 minutes before cutting. The layers need time to set so your slices hold together on the plate.
Variations
- Turkey version: Swap the ground beef for ground turkey for a lighter take with the same big flavor.
- Extra veggie: Layer in sliced mushrooms and diced bell peppers with the zucchini for a more loaded pan.
Ingredients
Directions
Cook beef and onion.
Drain, add spaghetti sauce, parsley and oregano.
Bring to boil, stirring, and keep warm over low heat.
Mix remaining ingredients except zucchini and mozzarella.
Beat 20 strokes. Spread half of dough in ungreased 19 x 9 pan.
Sprinkle half of zucchini and half of meat over dough.
Top with half of mozzarella.
Drop remaining dough by teaspoonfuls. Repeat with remaining zucchini, meat and cheese.
Bake until dark golden brown at 375℉ (190℃) for 30 to 35 minutes.
Let stand 10 minutes before cutting.
