40 minThis is comfort food casserole cooking at its most practical. Lean ham, sweet corn, onions, and green pepper get bound together in a light white sauce with a hint of dry mustard and Worcestershire, then baked under a crispy layer of breadcrumbs and melted American cheese.
Skim milk keeps the sauce lighter than a traditional casserole without sacrificing that creamy, saucy quality. The whole thing bakes in 25 minutes until it’s bubbling around the edges and golden on top.
It feeds six generously, comes together with pantry staples, and makes a solid weeknight dinner or a crowd-pleasing potluck dish.
Kitchen Tips
- Drain the canned corn well so it doesn’t thin out the white sauce
- Use lean, cooked ham to keep the fat content in check while still getting plenty of smoky, salty flavor
- Let the casserole rest for 5 minutes after pulling it from the oven so the sauce thickens and it scoops out cleanly
