This no-bake appetizer looks like a tart but is really a shaped cheese spread with a chutney center. Cream cheese softened in the microwave gets blended with curry powder, sherry, cheddar, and scallions, then shaped into a tart form on a platter with built-up edges and a well in the middle for pureed chutney.

The curry powder and sherry do something unexpected to the cream cheese and cheddar base. The warmth of the curry and the slight sweetness of the sherry turn what could be a basic cheese ball into something with actual complexity. Then the chutney pooled in the center brings fruity sweetness and acidity that makes every cracker-scoop a different experience depending on your chutney-to-cheese ratio.

This is peak 1970s entertaining in the best possible way. It looks impressive, takes 20 minutes to assemble, and feeds a crowd.

Kitchen Tips

  • Microwave the cream cheese at 50% power as directed. Full power overheats the edges while the center stays cold, giving you a lumpy, uneven blend.
  • Build the tart sides high enough to hold the chutney. Use a spatula dipped in water for smooth shaping.
  • Puree the chutney until smooth so it pools evenly in the well. Chunky chutney slides off the cheese instead of settling in.
  • Chill for at least an hour until firm. The tart shape holds better when cold and scoops cleanly onto crackers.

Variations

  • Tropical version: Use mango chutney and swap the cheddar for pepper jack for a sweet-spicy combination.
  • Herbed cheese tart: Add fresh chopped cilantro to the cheese mixture for a brighter, fresher flavor that plays well with the curry.

Directions

Place unwrapped packages of cream cheese in a 2-quart glass measure.

Microwave on medium (50 percent) 2½ minutes.

Blend in curry powder and sherry.

Fold in Cheddar and ¾ of onion; mix well.

Spoon mixture onto serving platter in an 8-inch circle.

Use a spatula to form a tart shape, building up sides while indenting the top surface area to form a well.

Place chutney in blender and purée to uniform mixture.

Pour in “well” area of cheese tart.

Chill until firm.

To serve, garnish top with remaining onion.

Accompany with crackers.
