Broccoli salad with bacon is a potluck legend for a reason. Crunchy, salty, sweet, tangy, all in one bowl.

Raw broccoli florets get chopped small and tossed with minced red onion and golden raisins. The dressing is fat-free mayo whisked with white balsamic vinegar and honey until smooth. Crispy crumbled bacon goes on last so it stays crunchy.

Fifteen minutes from fridge to table. That’s it.

This is the side dish that disappears first at every cookout, every potluck, every family dinner. Make it once and people will start requesting it by name.

Kitchen Tips

  • Chop the broccoli florets into small, bite-sized pieces. Big chunks are hard to eat and don’t pick up enough dressing
  • White balsamic vinegar keeps the dressing light in color. Regular balsamic works but turns everything brownish
  • Add the bacon right before serving so it stays crisp. Soggy bacon is a crime against this salad
  • Golden raisins are sweeter and milder than dark ones. They’re the right call here

Directions

Cook bacon in a large skillet or on a griddle over medium heat until browned and crisp.

Drain on paper towels.

Crumble into ½-inch pieces; set aside.

Cut florets from broccoli stems and chop into small pieces.

Transfer to a salad bowl and toss with minced onion and raisins.

In a small bowl, whisk together mayonnaise and vinegar until smooth.

Add honey, salt and pepper, whisking to combine.

Pour dressing over broccoli mixture and toss to coat evenly.

Crumble bacon pieces over broccoli slaw and serve immediately.
