Curried cheddar and cream cheese spread with dry sherry and chopped chutney. Serve with crackers as an appetizer or with fresh fruit as a light dessert. Ready in 10 minutes.

This is a cocktail party spread that punches well above its weight for 10 minutes of effort. Sharp cheddar and cream cheese get blended with dry sherry and a touch of curry powder, then folded together with chopped chutney for sweet-spicy pockets in every bite.

It works two ways. Top it with snipped chives and serve alongside crackers for a savory appetizer. Or skip the chives and set it out with sliced apples, grapes, and pear wedges for a surprisingly elegant dessert dip.

The sherry adds a nutty warmth that ties the sharp cheese and fruity chutney together. Make it an hour ahead so the flavors have time to meld in the fridge.

Pro Tips

  • Use the sharpest, most aged cheddar you can find. Mild cheddar fades into the background against the bold chutney and curry.
  • Soften the cream cheese fully at room temperature before blending. Cold cream cheese makes a lumpy spread.
  • Chop the chutney fine so it distributes evenly rather than sitting in big pockets.
  • Bring it back to room temperature before serving. Cold dulls the flavors and makes the spread stiff.

Directions

Combine first five ingredients and blend well.

Stir in chutney.

Turn into serving dish.

Top with chives if for appetizer and serve with crackers.

If served as a dessert, serve with fresh fruit to dip into mixture.
