If you’ve been hunting for a no-fuss Southwestern casserole that the whole family will demolish, look no further.

Seasoned ground beef with onions, garlic, and green chiles gets layered between strips of corn tortillas and buried under a mountain of melted cheddar cheese.

It’s the kind of bake you throw together on a busy weeknight and still feel like you put in some real effort.

Customize the sauce layer however you like: enchilada sauce, salsa verde, or even a simple can of tomato sauce all work here.

Kitchen Tips

  • Drain the beef well after browning. Excess grease will make the casserole soggy instead of layered and crispy on top.
  • Use stale tortillas if you have them. Day-old corn tortillas hold their structure better and won’t turn to mush in the bake.
  • Top with sour cream, sliced jalapeños, or fresh cilantro after baking for extra color and a cool, creamy contrast.
