Buttermilk Cookies with Frosting

Pillowy soft buttermilk drop cookies baked until pale golden get frosted with sweet buttercream and sprinkled with colored sugar for nostalgic treats.

30 minThese are the cookies that taste like childhood, all soft and pillowy with sweet frosting.
Cream sugar and shortening, beat in eggs and buttermilk, then add just enough flour to make a soft dough. Drop by teaspoon onto baking sheets and bake just until set but still pale (6 to 8 minutes max). The secret is underbaking them so they stay tender. Once cool, frost with simple buttercream made from melted butter, powdered sugar, and milk, then decorate with colored sugar before the frosting sets.
Makes 5 dozen, which sounds like a lot until you eat three in one sitting.

- Bake until very light colored (don’t let them brown)
- Cookies should be soft to the touch when done
- Cool completely before frosting or it will melt
- Decorate immediately after frosting while it’s still wet

Cream together sugar and shortening.
Beat in eggs. Add buttermilk; then add soda, baking powder, salt and flour and beat until mixed, then add vanilla.
Drop by teaspoon onto greased and floured cookie sheet. Make 5 dozens.
Bake at 350℉ (180℃) F until very light (about 6 to 8 minutes).
Frost with buttercream frosting when cool.
Frosting: Spoon the melted margarine mixture into sugar gradually, while beating with mixer.
Decorate cookies with colored sugar, etc. before frosting dries.
