These are the cookies that taste like childhood, all soft and pillowy with sweet frosting.

Cream sugar and shortening, beat in eggs and buttermilk, then add just enough flour to make a soft dough. Drop by teaspoon onto baking sheets and bake just until set but still pale (6 to 8 minutes max). The secret is underbaking them so they stay tender. Once cool, frost with simple buttercream made from melted butter, powdered sugar, and milk, then decorate with colored sugar before the frosting sets.

Makes 5 dozen, which sounds like a lot until you eat three in one sitting.

Kitchen Tips

  • Bake until very light colored (don’t let them brown)
  • Cookies should be soft to the touch when done
  • Cool completely before frosting or it will melt
  • Decorate immediately after frosting while it’s still wet
