When you need dinner on the table fast and you want it to feel special, this is the recipe to reach for.

Bay scallops get tossed in a quick glaze of honey, fresh lime juice, and olive oil, arranged in a single layer, and broiled for about 6 minutes total.

That’s it.

The honey caramelizes under the heat while the lime keeps everything bright and zippy.

A final shower of grated lime zest and a squeeze from a fresh wedge right before serving wakes up the whole plate.

Pro Tips

  • Pat the scallops completely dry before tossing them in the glaze. Wet scallops steam instead of searing and you’ll miss out on that golden caramelization.
  • Don’t crowd the pan. A single layer with space between each scallop lets the heat circulate and brown them evenly.
  • Watch the time closely. Bay scallops are small and cook fast. One extra minute can turn them from tender to rubbery.
  • Pour every drop of the pan juices over the plated scallops. That concentrated honey-lime liquid is too good to leave behind.
