The cream cheese is the smart move that distinguishes this from a basic condensed-milk pie. It adds tang to balance the sweet, body to give the filling a denser texture, and stability that prevents the filling from weeping over time.
Real key lime juice is non-negotiable. Persian lime juice (the standard supermarket lime) is more acidic and one-note tart; key limes have a perfumed, almost floral quality that defines proper key lime pie. Use Nellie & Joe’s brand bottled key lime juice if fresh isn’t available.
The condensed milk reaction is the chemistry trick. The acid in the lime juice causes the milk proteins to thicken naturally, which is why this pie sets without gelatin or eggs. Mix slowly to maintain the air structure, and let the pie chill at least 3 hours.
