Bulgur wheat gets mixed with dried basil, salt, and pepper, then soaked in boiling water and baked covered until the grains turn fluffy and tender.
A handful of chopped pecans folded in at the end brings a buttery crunch that elevates this from plain grain to something you’ll actually look forward to eating alongside roasted chicken, grilled fish, or a big vegetable stew.
It’s the kind of side dish that quietly makes everything else on the plate better.
Pro Tips
- Toast the pecans in a dry skillet for a few minutes before adding them. It deepens their flavor significantly.
- Keep the baking dish tightly covered so no steam escapes. The bulgur needs that trapped moisture to cook through properly.
- Leftovers make a great base for grain bowls. Toss with roasted vegetables, feta, and a lemon vinaigrette.
