These make-ahead refrigerator cookies are pure genius for busy bakers who want homemade treats without the last-minute scramble.

The dough rolls up like a log, chills until firm, then slices into perfect rounds that bake up crisp-edged with a tender center.

Orange zest and pecans give every bite a citrusy crunch that’s way more interesting than plain sugar cookies.

Kitchen Tips

  • Chill the dough log overnight for easiest slicing (soft dough squishes under the knife)
  • Use a sharp, thin-bladed knife and wipe it clean between slices for neat edges
  • Freeze unbaked slices on a tray, then bag them for cookies-on-demand for up to 3 months
  • Roll the dough tighter rather than looser to prevent air pockets
