You start with bouncy oriental noodles, then add little meatballs of ground pork, sliced sausages, shrimp, and ham. All that protein gets stir-fried in a screaming hot wok before the cooked noodles join the party. Then come the vegetables: crunchy bean sprouts, sweet snow peas, and fresh chives.
Kecap manis (sweet soy sauce) brings deep, caramelized sweetness while ginger and white pepper add warmth. Everything gets tossed together until every strand of noodle is coated.
Finish with sambal oelek or sambal manis at the table so everyone can dial in their preferred heat level.
Chef Tips
- Cook noodles al dente; they’ll continue cooking in the wok
- Have all ingredients prepped before you start (stir-frying moves fast)
- Use high heat and keep everything moving to prevent sticking
- Kecap manis is essential; regular soy sauce won’t give the same sweet depth
- Leftovers are fantastic cold or reheated the next day
Ingredients
Directions
Cook the noodles according to the directions on the pack. Cut the onions and garlic into fine pieces. Make little balls of the minced pork and fry this together with the sausages in a wok or wide frying pan. Then add the cooked noodles and stir-fry. Now add all the vegetables, soy sauce, shrimp, ham, and spices, add salt and pepper to taste ans stir-fry until it is thoroughly hot.
Serve on a plate. Add soy sauce, Sambal Oelek, or Sambal Manis to taste. Sambal Manis (dark hot condiment) is used more with these two than the soy based pork ones.
