50 minWhat if a bacon cheeseburger and a pizza had a baby, and that baby was a casserole? You’d get this.
Browned ground beef, onions, and red bell pepper get mixed with crumbled bacon and chunky pizza sauce, then layered in a baking dish with sliced Roma tomatoes and cheddar cheese.
The twist: instead of rolling out dough, you pour a simple egg-milk-flour batter right over the top that puffs up golden and bread-like in the oven.
Kids go absolutely wild for it, and the cleanup is one dish and a mixing bowl.
Pro Tips
- Drain the ground beef mixture well before spooning it into the dish. Excess grease will make the batter soggy on the bottom.
- Slice the Roma tomatoes thin so they nestle into the cheese layer without adding too much moisture.
- The batter puffs up like a popover, so don’t open the oven door during the first 15 minutes of baking.
- Leftovers reheat well in the oven. Skip the microwave if you want to keep that crust crisp.
