Cheesy artichoke squares with mozzarella, eggs, and bread crumbs baked golden and cut into 24 bite-sized pieces. A crowd-pleasing appetizer you can prep ahead.

60 minThese artichoke squares are the ultimate make-ahead party appetizer.
Chopped artichoke hearts mix with eggs, mozzarella, bread crumbs, parsley, and sauteed onion, then spread into a baking dish and baked until set and lightly browned. Cut them into 24 neat little squares and arrange on a platter.
The beauty here is that you can assemble the whole thing ahead of time, refrigerate it, and bake right before guests arrive.
Garnish with nasturtium flowers if you want to get fancy.
Pro Tips
- Save the liquid from one jar of artichokes to saute the onion. It adds a layer of artichoke flavor from the start
- Let the baked squares cool 15 minutes before cutting. They hold together much better
- These can be assembled the night before and refrigerated unbaked. Just add a few extra minutes to the bake time
- Serve warm, not hot. The flavors open up as they cool slightly

Directions
Drain liquid from 1 jar of artichokes into 1-puart saucepan. Drain liquid from second jar of artichokes and discard. Finely chop all artichokes; set aside.
Grease 12 inch by 8 inch baking dish . In liquid in saucepan, over medium heat, cook minced onion until tender. In medium bowl, with fork, beat eggs until blended. Stir in cooked onion and chopped artichokes, mozzarella cheese, bread crumbs, parsley, salt and pepper.
Spread mixture evenly in baking dish. If not baking right away, cover and refrigerate.
ABOUT 1 HOUR BEFORE SERVING; Preheat oven to 325?F. Bake artichoke mixture 30 to 35 minutes until set and lightly browned. Cool 15 minutes in dish on wire rack.
With knife, cut lengthwise into 4 strips then cut each strip crosswise into 6 pieces. Arrange appetizer on platter; garnish and serve.
MAKES 24 HORS D’OEUVRES.
