These artichoke squares are the ultimate make-ahead party appetizer.

Chopped artichoke hearts mix with eggs, mozzarella, bread crumbs, parsley, and sauteed onion, then spread into a baking dish and baked until set and lightly browned. Cut them into 24 neat little squares and arrange on a platter.

The beauty here is that you can assemble the whole thing ahead of time, refrigerate it, and bake right before guests arrive.

Garnish with nasturtium flowers if you want to get fancy.

Pro Tips

  • Save the liquid from one jar of artichokes to saute the onion. It adds a layer of artichoke flavor from the start
  • Let the baked squares cool 15 minutes before cutting. They hold together much better
  • These can be assembled the night before and refrigerated unbaked. Just add a few extra minutes to the bake time
  • Serve warm, not hot. The flavors open up as they cool slightly
