90 Minute Cinnamon Buns

Homemade cinnamon rolls in 90 minutes: soft yeast dough rolled with brown sugar-cinnamon butter, sliced into 12 buns, and baked in muffin tins until golden and sticky-sweet.

90 minMix flour, yeast, sugar, and salt, then stir in warm milk and butter along with an egg to form soft dough.
Knead five times, rest ten minutes, then roll into a rectangle and slather with cinnamon-brown sugar butter.
Roll it up, slice into twelve rounds, nestle them in greased muffin tins, and let rise twenty minutes over a pan of boiling water for extra steam.
Bake until browned and serve warm with all that cinnamon-sugar goodness spiraling through each pull-apart bite.

- Heat milk mixture to 105-115°F (warm to touch but not hot) for optimal yeast activation
- Roll dough gently into 12×9 rectangle to keep filling distribution even
- Rising over boiling water creates steam that speeds proofing in just 20 minutes

Set aside 1 cup flour.
Mix remaining flour, yeast, sugar and salt in a large bowl.
Heat milk, water and ¼ cup butter to 105 to 115 F.
Stir liquids into flour mix, stir to blend completely.
Add the egg.
Add enough of the reserved flour to make a soft dough that does not stick to the bowl.
Turn out onto a floured surface and knead 5 times.
Cover dough and let rest 10 minutes.
Mix brown sugar, cinnamon and butter together (amounts can be increased up to 1½ times given for extra sticky buns).
Gently roll dough into a 12×9 rectangle.
Spread with cinnamon mixture and sprinkle with raisins if desired.
Roll up from long side and pinch to seal the seam.
Cut into 12 equal slices with a sharp knife.
Place cut side up in greased muffin tins.
Place muffin pan on a baking sheet on top of a large shallow pan half filled with boiling water.
Cover dough and let rise for 20 minutes.
Bake at 375℉ (190℃). for 20 minutes or until browned. Remove from muffin tins immediately to cool.
Serve warm!

You know I usually shy away from cinnamon buns because the dough takes forever to make! But this sounds perfect for me - who is completely impatient when it comes to eating delicious food the minute I decide I want it. They look fantastic!
