30 minYummy baking powder biscuits are the no-fuss five-ingredient version every cook should have memorized. Flour, baking powder, salt, shortening, and milk. No eggs, no buttermilk, no fancy steps. Just tall, tender biscuits with the soft inside and crisp golden top that make them a Sunday morning fixture.
The secret is the cold shortening cut into the flour. Those bits of fat melt as the biscuits bake, leaving tiny steam pockets that create the flaky layers. Warm shortening makes dense biscuits every time.
Minimal kneading is critical. The recipe says half a minute and means it. Overworked dough develops gluten and turns biscuits tough and chewy instead of tender.
Kitchen Tips
- Cut the shortening in until the mixture looks like coarse peas, not fine sand. Larger pieces of fat make flakier biscuits.
- Pat the dough out gently with your hands instead of rolling for the highest rise.
- Press the biscuit cutter straight down without twisting. Twisting seals the edges and stops the biscuits from rising tall.
- Bake immediately after cutting. Sitting biscuits start their reaction on the counter and rise poorly.
Variations

Mix flour, baking powder, and salt together.
Cut in the shortening until it is evenly mixed with the dry ingredients.
Then add, milk, mixing well.
Then Knead for a a ½ minute and roll out to about 1½ inch in thickness.
Cut with a Biscuit cutter.
Place the biscuits 1½ inches apart on a greased baking sheet.
Then brush with the Milk and bake at 450 degree F oven degrees 10 to 12 minutes.
Note: Raisins or dried cranberries can be added to batter.

I'm curious though, do you think it would be okay to use chocolate chips instead of raisins or dried cranberries? :)
I would say go for it, why not. I think chocolate chips would be another excellent alternative. Happy Baking :)
I tried the recipe and I'm not sure what happened but the final biscuits ended up being dryer and flakier than I'd like. Would definitely add more milk next time! Otherwise, I loved the flavor, would totally recommend (just make the dough isn't too dry!)
