This turkey burger throws the rulebook out the window. Instead of a plain ground turkey patty, you mix in cooked wild rice, whole cranberry sauce, cooking wine, and chopped onion. The result tastes like Thanksgiving dinner shaped into a burger, and it works.

Wild rice gives the patties a nutty, chewy texture that’s completely different from a standard breadcrumb-only filler. The grains hold moisture during grilling, keeping the burgers from drying out, which is the number one problem with turkey burgers.

Cranberry sauce does double duty here. The berries add pops of tart sweetness throughout the patty, and the sauce’s natural pectin helps bind everything together. Each bite has that familiar turkey-and-cranberry pairing that just makes sense.

  • Make the patties slightly larger than your buns. They shrink during cooking.
  • The wild rice should be fully cooked and cooled before mixing in. Hot rice will partially cook the turkey during mixing.
