This is the slaw you bring when the usual mayo-drenched stuff just won’t cut it.

Three kinds of pepper, sweet red and green bells plus a hit of fresh jalapeno, get tossed with shredded angel hair cabbage and scallions. The dressing is bright and clean: white wine vinegar, fresh lime juice, and just a whisper of sugar to round things out.

No cooking required. No heavy dressing weighing it down. Just crisp, vibrant crunch with a little heat at the finish.

Pro Tips

  • Seed the jalapeno completely for mild heat, or leave a few seeds in if you like things spicy

Directions

Place first 5 ingredients in a large bowl, tossing to combine.

Combine vinegar and remaining ingredients in a small bowl, stirring with a whisk.

Pour vinegar mixture over cabbage mixture, tossing to coat.
