T-3 miracle soup is one of the most famous American diet soups, the foundation recipe behind the cabbage soup diet that swept the country in the 1980s. The whole pot is low-calorie vegetables boiled until soft, seasoned with a single packet of onion soup mix, and that’s it. Six ingredients, one pot, fills you up without weighing you down.

The massive amount of cabbage is the star and the diet’s namesake. A whole head shredded into the pot gives you fiber and bulk that fills the bowl while keeping calories minimal. The cabbage softens and sweetens during the simmer, losing its raw bite.

Six large onions sounds like overkill but they melt into the broth, adding sweetness and body that ties the rest of the vegetables together. Combined with the onion soup mix, the soup gets an aromatic depth that punches above its calorie count.

Directions

Cut up all vegetables in a large pot, cover with water, add onion soup mix, and boil for 10 minutes.

Cover and lower heat and simmer until vegetables are soft.

What size cans of tomatoes. Are they whole, crushed or purée tomatoes?
