Red snapper fillets simmered on a bed of sauteed onion rings with tomato sauce and sweet basil. A simple, healthy fish dinner ready in 30 minutes with just a handful of ingredients.

When you have fresh red snapper, the last thing you want to do is complicate it. This recipe gets that.

Onion rings saute in butter until translucent, then the snapper fillets lay right on top, get a spoonful of tomato sauce and a sprinkle of sweet basil, and simmer covered until the fish flakes apart with a fork. That’s it. Thirty minutes, start to plate.

The onions soften into the tomato sauce underneath, creating a built-in bed of flavor that the snapper steams over gently.

  • Keep the heat at a gentle simmer so the fish cooks through without drying out
  • The fish is done when it flakes easily, usually 10 to 15 minutes depending on thickness
  • Pair with steamed new potatoes and vegetables for a light, complete meal

Directions

Rinse fish and drain on paper towel.

In large skillet, sauté onion in butter until just translucent.

Lay fish fillets on top of onion rings.

Top each fillet with tomato sauce.

Sprinkle sweet basil and pepper to taste.

Cover and simmer 10 to 15 minutes, until fish flakes.

Serve with steamed new potatoes and vegetables.
