A par-baked pizza crust gets brushed with garlic oil, then loaded with sauteed spinach and onion mixed with mashed potatoes, topped with both mozzarella and cheddar, and finished with sliced onion rings on top.
It sounds wild, but the combination of creamy potatoes, melted cheese, and tender spinach on a crispy crust is pure comfort food logic.

- Par-bake the crust first for 7 to 9 minutes until light golden. This ensures a crisp base that can hold the heavy potato topping without going doughy.
- Sautee the spinach with the onion until the onion is just crisp-tender. Overcooked onions get mushy and disappear into the potato.
- Use leftover mashed potatoes if you have them. Instant mashed potatoes also work fine here since they’re getting baked with cheese.
- Layer mozzarella first, then cheddar on top. The mozzarella melts into a stretchy base while the cheddar browns on the surface.

Heat oven to 425 degrees F.
Grease 13×9 inch pan. Unroll dough and place in greased pan; starting at center, press out with hands.
Bake for 7 to 9 minutes or until light golden brown.
Meanwhile, in large skillet cook spinach and chopped onion in butter until onion is crisp-tender.
Stir in potatoes; mix well. In small bowl, combine oil and garlic salt; mix well.
Brush over partially baked crust; top with spinach mixture.
Sprinkle with mozzarella and then Cheddar cheeses; top with onion rings.
Bake for another 15 to 20 minutes or until cheese is melted and edges of crust are golden brown.
