These aren’t your basic backyard burgers.

Sauteed onions, garlic, and warm spices like nutmeg and coriander get mixed right into the ground beef, building flavor from the inside out. The patties chill briefly to firm up, then hit a screaming-hot skillet for a deep brown crust while staying juicy inside.

Stack them on toasted buns with thick slices of tomato and onion, then let everyone customize with ketchup, mustard, and mayo.

Pro Tips

  • Cook onion mixture until soft and fragrant before mixing into beef for maximum flavor
  • Chill formed patties for 20 minutes so they hold together better during cooking
  • Preheat skillet until nearly smoking for the best sear and crust development
  • Don’t press down on patties while cooking or you’ll squeeze out all the juices
