2 hrsThese veggie burgers get their hearty texture from rolled oats cooked with tamari until thick and binding.
Sauteed onions, carrots, celery, and peppers fold into the mixture with fresh basil and oregano for flavor that doesn’t need meat.
Bake them instead of frying for patties that hold together on the grill or in a bun without falling apart.
Pro Tips
- Chill the mixture at least 2 hours or overnight so it firms up enough to shape cleanly
- Use an ice cream scoop to portion uniform patties that cook evenly
- Flatten each portion gently, don’t compress too much or they’ll be dense instead of tender
- Bake on a lightly oiled sheet so the bottoms crisp up without sticking
Ingredients
Directions
Bring water to a boil in a saucepan over medium-high heat.
Add oats, tamari or soy sauce and 1 tablespoon oil.
Reduce heat to low and cook 2 minutes, remove from heat and set aside.
In skillet, heat the remaining oil over medium heat.
Add rest of ingredients and sauté 2 minutes or until vegetables are softened.
Add teaspoon cooked oat and combined well.
Chill at least 2 hours or overnight.
Preheat oven to 375℉ (190℃).
Using an ice cream scoop (¼ cup), portion mixture.
Form each portion into a ball and flatten slightly.
Place on a lightly oiled baking sheet and bake 20 minutes until golden brown.
