Quick spaghetti bolognese browns beef with crushed tomatoes and mashed carrots, which add natural sweetness and body to a meaty sauce in about 30 minutes. An easy weeknight family dinner over spaghetti.

A real bolognese can simmer for hours, but this weeknight version gets there in about thirty minutes with one smart shortcut: mashed carrots. Stirred into the sauce, they melt in to add natural sweetness, body and a little hidden vegetable, doing the job a long simmer usually would.

It starts the right way, browning ground beef until it’s deeply colored, which builds the savory backbone of the sauce. Then crushed tomatoes, the mashed carrots and a hit of Italian herbs go in to cook down into a thick, clingy ragu.

Cooking until the sauce thickens, rather than leaving it watery, is what makes it cling to the spaghetti instead of pooling on the plate. A shower of parmesan on top finishes each bowl.

It’s the kind of fast, family-friendly dinner that tastes like more effort than it took, and kids tend to devour it without noticing the extra veg.

  • Brown the beef well before adding any liquid for the deepest flavor.
  • Cook the sauce down until thick so it coats the pasta rather than running off.
  • Mash the carrots smooth so they melt invisibly into the sauce.

Directions

In a sauce pan, fry the beef mince until brown. Add a can of crushed tomatoes or 1 cup fresh tomatoes chopped. Add mashed carrots, use canned carrots as alternative. Add Italian herbs, salt and pepper. Cook until the sauce is thick and all ingredients fully cooked. Serve on cooked spaghetti and sprinkle parmesan cheese on top
