Fry bread carries layers of history. The Osage version is part of a broader Native American tradition that stretches across the Plains and into the Southwest, where flour, salt, baking powder, and milk get pressed into a quick dough and fried in hot fat. Cut into diamond shapes with a center slit, the dough puffs into golden pillows the second it hits the oil.

That little slit in each diamond is not decorative. It vents steam during the fry and lets the dough expand outward instead of doming up unevenly, which is exactly why the recipe also tells you to give each piece a gentle stretch as it goes in. The result is a wide, flat fry bread with crisp blistered edges and a chewy center, ready for honey drizzles or savory toppings like ground beef and shredded cheese.

Kitchen Tips

  • Keep the oil between 360 and 375°F (182 to 190°C). Too cool and the dough soaks up grease. Too hot and the outside browns before the middle cooks through.

Directions

Sift flour, salt and baking powder into bowl.

Stir in shortening and milk.

Knead lightly to gather dough into ball.

Roll out dough on lightly floured board.

Cut into diamond shapes.

Cut small slit in the center of each diamond.

Heat shortening in deep fryer to 370 degrees F.

When dropping diamond-shaped dough into hot oil, stretch the dough a little bit.

Fry 2 or 3 at a time until golden on both sides.

Drain on paper towels.

Very good. I mix honey and butter in equal parts for dipping.

I add a Tbs of honey to milk & warm it slightly before adding to flour mixture.
